The vacuum: everyone hears about it, but do you really know what it is for, how it works and all the benefits you could get from it?

WHAT IS IT FOR:

First of all it allows you to keep the organoleptic characteristics and flavor of food unaltered preventing their decay and therefore extending their shelf life.

HOW IT WORKS:

The operation is simple: the food is placed in special bags, which are then deprived of air in them using a special machine to ensure that the oxygen contained in them is lost. It is oxygen, then air, which over time causes mold and bacteria. When we remove it we avoid the proliferation of bacteriological agents that damage food.

The vacuum is possible only if you have a special machine to use with special bags. The machine can be more or less professional and differs between Bell machines and external suction machines. Generally for domestic use just a small one with basic functions, the classic with external suction; obviously a larger machine with more functions is also a more powerful and fast machine but at the same time also more expensive.

The evaluation of the type of vacuum machine to be purchased therefore depends on the space available, the use that is made of it and clearly on the budget that is available.

A good vacuum bag must not only be designed specifically for food but also heat-resistant, tear-resistant and free of plasticizers; needless to mention the importance of size so it is always good to choose bags of different sizes in relation to the type of food to be sealed.
